It seems 4 episodes of TNG fully remastered in HD will be available to fans by the end of this year as a kind of sample disc:

Very cool. I wonder which 4?

I also wonder how they're approaching the series. With TOS, they did the remastering out of order, to spread out more FX-heavy episodes, amongst other reasons. Will they do that with TNG, or go in order?

I would imagine they would remaster TNG the same way as the original series, out of order. Star Trek TNG pretty much started me on Sci-Fi, so these Blu-Ray releases mean a lot to me. Paramount has always done an amazing job on the Trek dvd sets(except for the packaging) and given the source material, I'm overly curious about the end result in video/audio quality.
