I Got Food Again!

So, the wife goes away on a trip and I thought I had more food than I actually had. So, I go to the two grocers I have access to. Unfortunately, the meatballs are a discontinued at one and the other one is mainly a bulk food store that overwhelmingly has dried goods (e.g. flour, nuts, etc). So, after only a few days I run out of food. Perhaps next time I should look into the boxes while making my shopping list
Anyway, we went to a larger grocer a few days ago and I have food again! Found some amazing meat and I'm trying some new fruits/veggies (at least at home).
So, tonight (or soon), I'm going to cook up an experiment. I'll let you know how it goes

Mmmm, food. Glad to hear you have food once more.
I put a few simple things together to make a snack for the kids the other day. You should give it a try: fajita sized tortilla, pizza sauce, cottage cheese and pineapple. Top tortilla with sauce, cheese, and fruit and place it in the oven for about 9 minutes (475F). We all loved it.

Thanks. Take-out/Deliver is nice a couple times, but gets bad/tired/etc... expensive, after a short time. It's nice to have something fresh for a change.
I'd give that recipe a try but I'm not a fan of cottage-cheese. Any ideas for a substitute? I'm just thinking that a dryer cheese isn't going to do well in that temp. What do you think about Feta?

The kids don't normally eat it either, but it worked great with the pineapple and sauce. I was pleasantly surprised. I think feta would be yummy. I like feta.
