I don't watch Buffy and Angel but for Firefly it would be Objects in Space.

Buffy - Hush. But damn if that show didn't have dozens of greats to choose from! Passion, Becoming II, The Wish, Restless, Fool for Love, The Body, Once More with Feeling, Conversations with Dead People, Chosen...
Angel - Not Fade Away. But Carpe Noctem (sp?) came a very close second.
Firefly - Out of Gas. Objects in Space is my favourite, but Out of Gas is the better written of the two. Just. I think. Gah!!!
