After watching the episodes over and over for weeks I have finaly settled for my favourite quote. It's from the pilot Serenity and unsurprisingly is a Joss line :). The way Mal says "politely" at the end always makes me burst out laughing. Just the thought of trying to shoot someone politely is hillerious.
________________________________________________________________________
Mal: If anyone gets nosy, just, you know... shoot 'em.
Zoe: Shoot 'em?
Mal: Politely.

That back and forth between Mal and Zoe is about my fav. Not so much for its hilarity, but when Mal says.. " ....cause?". That line even got my 76 yr old dad to laugh, something he rarely does while watching t.v. these days. Thanks Firelfy.

Saffron: "I'm bequeathed to you."
Mal: "To Whubbawho?"
Saffron: "Captain Reynolds, sir... I'm your wife."
Mal's blank stare - I didn't just hear that
did I? - is my all time favorite moment in the entire series. The moment that made me a browncoat for-evah.

Yup, and then a little later, when he exclaims "I didn't marry you!" and Book says he did, he leans into Jayne and whispers, "how drunk was I last night?" ROTFLMAO! Of course he don't trust the guy, but they can still be 'drinking buddies'! ;)

If I absolutely had to choose just one, I would have to pick the "special hell" speech, it cracks me up every time I watch it, especially when Book leans back around the corner and repeats "the SPECIAL hell"

I always liked:
JAYNE: Captain, can you stop her from bein' cheerful, please?
MAL: I don't believe there is a power in the 'verse that can stop Kaylee from being cheerful.
He smiles at her, never stopping working.
MAL: Sometimes you just wanna duct tape her mouth and dump her in the hold for a month.
She grins and kisses his cheek.
KAYLEE: I love my captain.
That and...
ZOE: Now we have a boatful of citizens right on top of our... stolen cargo. That's a fun mix.
MAL: Ain't no way in the 'verse they could find that compartment, even-- (stops talking as Dobson walks past) Even if they were lookin' for it.
ZOE: Why not?
Mal is thrown by the question.
MAL: 'Cause...?
ZOE: Oh yeah, this is gonna go great.
...which leads to the shoot politely bit, of course, which is also very good
But then, there are so many good quotes it's hard to choose less than a dozen favourites!
Mal: "We're not gonna die. We can't die, Bendis. You know why? Because we are so... very... pretty. We are just too pretty for God to let us die."

Hero of Canton
So, many, but I want to mention a few that no else did.
River one liner's:
"Keep on walking preacher man."
"Jayne is a girl's name."
--------------------
Fed: "Simon Tam, stand down."
Mal: " What? The Doctor? Oh. Hey. Is-is there a reward?

Finally,
And I forget why or what episode, but:
*Zoe: "That seems to be a solution to alot of problems. Give Jayne a big stick and stand back."
If that's not the right person or exact quote, but that's the gist of it. I loved that quote.

It was Shindig, I believe, and Inara speaking to Mal about what she thought of the pool game. I don't remember the exact quote though.
Like most people here, I have way too many favourite quotes to count. Here's a small selection though:
Jayne: Here's an idea I've been working on: why don't we shoot her first?
Wash: It is her turn...
Wash: Alright! Everybody NOT talking about sex, in here. Everyone else, outside!
Book: Well - isn't that *special*!
Mal: It takes a great man to show mercy. STAB I'm just a good man. STAB Well - I'm alright.
And on a slightly different note:
Simon's "I am very smart..." speech in Serenity chokes me up every time I see/hear it. The speech, plus the footage and music that goes with it is beautiful...
And my favourite Simon/River moment:
River (seeing the syringe Simon's brought): It's time to go to sleep again?
Simon: No, mei mei. It's time to wake up.

Wash: Name one!!!!
Mal: SHE MARRIED YOU!

Bequeathed: Left to you by someone who died
Betrothed: Pledged to marriage
To cleave: Hold tightly, as if joined in a single object (this is an old english interpretation; modern usage is pretty much exclusively "to separate")
I distinctly recall her saying, "I'm to cleave to you." I thought it was wonderful poetry, particularly because it conjured the older interpretation of the verb.
Bequeathed just makes no sense. *laughs*

Decide on a fave quote....how about no? hehe.
A lot of my favorite's have been mentioned here. THere's the 'When you can't run...' quote, pretty much everything Zoe says to Mal, and Wash. A lot of Wash.
"Big damn heroes, sir."
"He makes everybody cry...he's like a monster."
"Bwaa."
Alliance Commander: You fought with Captain Reynolds in the war?
Zoe: Fought with a lot of people in the war.
Alliance Commander: And your husband?
Zoe: Fight with him sometimes, too.
I'm trying to be original, but that leaves me with little to quote. Most everyone loves the same stuff. ^_^ Firefly is brilliant....every episode makes me laugh. Probably even more so than Buffy, and it usually leaves me fighting for air between giggles.
Oh, I can't believe no one has posted these...
Wash: Psychic, though? That sounds like something out of science fiction.
Zoe: You live on a spaceship, dear.
WASH: Yes, Mal. It would boost the signal, but even if some passerby did happen to receive, all it'd do is muck up their navigation.
MAL: Could be that's true.
WASH: Damn right, it's true! They'd be forced to stop and dig out our signal before they could even go anyplace!
*beat*
WASH: Well, maybe I should do that, then!
MAL: Maybe you should!
WASH: Okay!
MAL: Good!
Stegosaurus: We will rule over all this land, and
we will call it... "This Land."
T-Rex: I think we should call it "your
grave!"
Stegosaurus: Ah, curse your sudden but inevitable
betrayal!
T-Rex: Ha ha HA! Mine is an evil laugh! Now
die!
Stegosaurus: Oh, no, God! Oh, dear God in heaven!
"Holy mother of God and all her wacky nephews." (Didn't feel like finding out the chinese...)
Wash: The legs. Oh yeah, definitely have to say it was her legs. You can put that down. Her legs, and where her legs meet her back. Actually, that whole area. That, and above it.
Firefly is just too good.
"Bwaa...it's kind of a warrior...strikes fear into the hearts of..."

Oh!
My!
God(dess)!
Cleavers!
In an aside to the thread in which someone was arguing that River and Reavers are related by Academy manipulation (Reavers are just earlier versions of River that the Academy cast off), we now have a third group! Cleavers.
Cleavers are a renegade splinter group, broken away from the Companion's Guild. They no longer use their powers for good (sex), but for evil (cleavin'). They wander the 'verse cleaving to unsuspecting men and womenfolk, in both the OE and modern definitions given above. First they cleave to a guy ('hold tightly'), then they cleave ('separate') their thighs and cleave ('hold tightly') unto him. Finally, they cleave ('separate') the victims' money and other worldy possessions from them. Think 'sports wife'. For example, just wait 'til you see what Kobe's little Cleaver does to him over the next few years; he'd be luckier meeting Reavers. Very scary...
We've only met Saffron so far. I can hardly wait 'til we meet Ward, June, Wally and of course, *shivers* the Beaver.
Although, I think we already know who the beaver cleaver on the show is, right? Or do we need to run a pole, er, poll through that topic as well?
Thorazinely,
zoid

Oh. How could any of us forget this one? Well, those of us who are lucky enough to be able to afford the DVD's (or those of us who can't but bought it anyways). It's in the deleated scenes where River wants Book to marry her and Simon. Simon looks at book, and not knowing what to say, finally says it as bluntly as Jayne: "She's REALLY crazy." Or river saying later in the scene, "You gotta marry me now. I'm in the family way." Screw plot. They should've kept that in.

Hmmm... It occurs to me that this might be the reason Wash doesn't want children. Having children tends to negate the 'little beaver' attribute, especially for men with a 'little cleaver' (oddly, in this instance a cleaver may be defined as both separator and uniter). Maybe we're finding out more about Wash than originally intended...

Actually, 'cleave' is a Biblical usage, and appropriate for the heavily religious culture of Triumph, where Mal picks up his blushing bride (and oooh! How she blushes!).
The past tense is 'cleft', as in 'cleft chin' or 'cleft palate'. Rhymes with 'theft'...
And of course, if you look up 'cleavage', there's a picture of Christina Hendricks (YoSaffBridge) alongside the definition.
Thoughtfully,
zoid

I was looking for someone to put this down. I mean, the look he gives Zoe when she says that is just priceless!

That's my favorite, too! Off the gag reel!! It's my tag line.

My favorite off the gag reel is when Mal, Jayne and Zoe are trapped by the inhabitants of the bar in Train Job. And then the three of them just turn around and start-
"Hoooooow much is that geisha in the window? chin, chin I do hope that geisha's for saaaalllllleee...."

I like Wash's response to River stabbing Jayne.

Mine is:
Badger: "I thought we'd have a bit of a sit down"
Mal: "I was thinking more along the lines of a piss off"

I'm still partial to the exchange between Zoe and Jayne in War Stories:
"I'm smelling a whole lotta 'if' coming off this plan."
"You could have stayed in your bunk."
"Could'a, should'a, would'a!"

Darn - you got there just ahead of me - that whole exchange is a great one;
"You wanna go little man?"
"Only if its someplace with candlelight"
"I threw up on your bed"

Everyone credits this to River. Anyone notice that, when River says this to Kaylee near the end of War Stories, she's quoting what Kaylee said to her (& anyone else in earshot) @the beginning of the episode?

But when Kaylee says it my reaction is, "Awwww. Isn't that cute." When River says it my reaction is, "Damn. She's right."

I didn't notice it the first time I watched the ep. When I did notice it, I thought it made River's statement less scary. Now, I'm not so sure.

Yeah, that's why I talked about her badassness when I said I liked the quote. It's scarier the more you think about it.

bequeathed not 'to cleave'
No, Channain was right. "Bequeathed" means she was left to him when someone died. "To cleave" means to cling faithfully to (though it also means to split or seperate something).

All right, don't know how I forgot this one, also from "War Stories" (seems like it's one of the great quotable episodes). Mal's admonishments to the girls in the intro:
"Ah, the pitter-patter of tiny feet in giant combat boots. SHUT UP!"
...followed immediately by...
"One of you is going to fall, and die, and I'm not cleaning it up!"

I've always been partial to:
Kaylee- "Wash, tell me I'm pretty"
Wash- "Were I unwed I would take you in a manly fashion."
Kaylee- "Cause I'm pretty?"
Wash - "Cause you're pretty."
Pretty much sums up my life with my male friends right there,

What's your sig from? It totally fits something I'm writing and I'm curious where it came from.

Huh? Just watched the gag reel the other day and I don't recall this. Why would mine be different? Help! Need to find! Must watch!

There were two versions of the gag reel. The one included on the DVD is a shortened version. The longer gag reel is available on the internet. I think the address is in this thread:
http://www.fireflyfans.net/thread.asp?b=2&t=4492
There's probably a bunch more places to find the gag-reel. Just do a search through the archives of this section of the web site for "gag reel" and you'll see a number of threads.

Thank you soooooooooooo much! Can I ask for one more bit of info? I understand that there is an "easter egg?" on the DVD set. I just discovered what these are. Can you tell me how to find it? Thanks!

Sure. Put in disc 4 of the DVD set. Go to the Special Features section and then go to Page 2 of that section. Highlight (but don't select) the Joss sings Firefly theme feature. Push the left navigation button. One of the frilly decorations should now be highlighted. Select that.
editted to add: And, in the spirit of this thread, I'll add in a line that always cracks me up (although I'm not sure it's my favorite). It's from the scene in Shindig where Mal takes out his frustration with Inara on Kaylee.
JAYNE: Is she mad or something?
That and:
JAYNE: I'll buy you a slinky dress.
ZOE: I can hurt you.
Okay. That whole exchange starting with Wash wanting to get money from Mal to buy Zoe a dress.

After rewatching "The Message" just now I decided that my all time favourite quote, simply for the hilarious delivery would be Jayne's:
"What d'ya'll order a dead guy for?"

Gina has so many of these "throw away" lines that you miss - her exchange in OiS on the bridge - the whole "someone we'd miss.... I mean". Her timing is spot on.
