Something perhaps we can all talk about w/o disagreeing!

Last night we had chocolate-flavored protein rations.

Heh.

Not really.

Last night, I made a dynamite Szechuan stir-fried cabbage (cabbage cooked fast in hot oil, ginger, sesame oil, five-spice powder, fresh ground black pepper, dried red chili, soy sauce) and chicken (chicken, equal amount garlic, ginger, hot sesame oil, five spice powder, soy, topped with green onions).

Tonight, it's beef bean and cheese burrito made with range-fed beef, fresh salsa, all the trimmings and salad.

Tomorrow, fried pork chops, mashed potato, and asparagus.


Wednesday, Greek-style chicken soup with peas.

Thursday, turkey meatballs with homemade spaghetti sauce and broccoli.

Friday, ham and bean soup chock full of vegies.

All made heart-healthy. And we usually have a glass of red wine after dinner.

Who wants to come over? You're all invited!


PS: In the interest of sanitation we do not serve bagels!

What is this? You plan out your menu in advance. I'm like "huh, maybe i'll have some food." and then I said tomato basil soup, with tofu. Then my inner Marie Antoinette who had gone out and bought the chocolate layer cake and the eclaires with chocolate mousse on top said "hey, maybe cheese souffle instead." And then I had to go out and get the eggs. It was tricky, the road was icy, but it was a noble sacrifice, with precious little health benefit.

Wow - sounds skeeeeee-rumptious! Table for 2 please!

My wife and I made a "Spanish" chicken dish yesterday - dutch oven, garlic, onions, green peppers, hot esplette pepper for punch, chorizo for some porkie punch and chunky tomato sauce + fresh thyme, nicoise olives add some dice prosciutto because "bacon" makes everything better. Serve with steamed rice and life is good.
The rest of the week is less clear... but I know there's some shaved manchego cheese, baby greens and walnut vinaigrette on one day.

Now I want stir fry...

BWAHAHAHAHAHAHA!!!!!!!!!! And yeah, I'm one of those "organized" cooks- I scan the sales and plan my menu around that. Also, we have a few significant food allergies in the house: I'm allergic to wheat (major bummer, but explains the persistent anemia!) and hubby to corn and fish. Sis is allergic to wheat (same as me), chicken, and orange, so chicken a l'orange on noodles would be the trifecta for her. DD is a damnably picky eater.

As I recall, Geezer has a fondness for crabcakes and single malt. If I could ingest them, so would i.... sigh.

Pizmo. YUM! I'm coming over the YOUR house! (I see soyrizo with potato, onion, tomato, and pepper in our future!)

Brauts and seasoned fries washed down with an MBC high seas india pale ale.

MBC is down the road a ways from here, and I know one of the brewmasters, so occasionally I get some real awesome test brews, and sometimes some really blah ones, but you can *always* get the IPA, which is a good solid go-to brew for my cooking.

Ever have empanadas? Sweet meat pastries Argentinian-style? Here's my favorite recipe:

2T olive oil
med onion diced
1 kg extra-lean ground beef
2T sugar, 1 1/2 t fresh ground black pepper, 1 T paprika, 1 t cumin, 1 t cinnamon, 1/2 t nutmeg, 1/4 t cloves or allspice, 1 t salt, 1/2 c raisin, 1 boiled diced potato (optional), sliced green olives (optional)

Sautee onion in oil, add beef and brown. Mix all dry seasonings in a cup, sprinkle over meat and stir, add raisins, add potato and/or olives if desired. place a couple spoonfuls on a pastry round approx 5" dia (I cheat and use Pillsbury for the family) seal well and bake.

Yes, I admit Chris... I pay for my assassinations. But being allergic to wheat/ barley/ oats and suffering from reactive hypoglycemia, not much is open to me except meat, veggies, fruit (in moderation), soy, cheese + eggs, and things like rice, quinoa and amaranth (in moderation).

I thought I was the only one who knew about that. It is SOOoooooooo good.

I tend to cook ahead of time and freeze, which means a lot of 'one dish' meals.

I have some AWESOME recipes, and am working on creating more. Spanekopita with grilled lamb; a sort of caponata lasagna (the sauce is more like caponata); 'burrito bowl' which, every time I take one in to work and heat it up, people remark 'something smells good'; palak paneer, but since I can't get the paneer cheese I make it with ricotta and lemon juice; a Middle-Eastern style rice, lamb, tomato, and lemon casserole; jambalaya; egg poached in vegetable juice (which reduces to a thick, rich sauce), with bread, cheese and olive oil; a New Mexican style stew of beef, potato and Anaheim chili; and of course the usual chili con carne; pork, potato, carrot and cabbage stew with gravy; chicken pot pie; minnestrone soup ...

... all 100% organic, with a minimum of 1 serving of vegetables each. (uhhh ... I'm obsessive that way.)

The image is cooking show host Rachael Ray. I just decided to go with her for the reaver line, but that second was the most reaver looking picture I could find. Sadly, no one had done a Rachael Ray as Reaver photoshop and circulated it widely, I thought all information was online (It probably is, it's just a matter of getting to it.)

Keep the Shiny side up


Here at Chez Geezer, we tend to make big batches of stuff and freeze them, so we can grab whatever suits us that day. Currently, we got chili (my uncle Herbert's recipe with nada but meat and spices), spaghetti sauce with meatballs (frozen individually in a bit of sauce in ice cube trays), black bean soup, eight bean soup with chicken and sausage, plus a Costco pack of pork chops in the freezer. Soon Madame Geezer will be stewing a hen with veggies which will give us chicken chunks frozen in stock as a basis for soups and stews. Good winter food.

To keep from it all being starches, we have veggie stir fries (with a bit of chicken or pork) a couple times a week.

We have also found that a rice cooker is your friend.

One nice thing about living here in Northern Virginia is the amazing number of ethnic restaurants and markets, so pretty much anything you can imagine is available either ready-made or as ingredients.

Has the topic returned to food?
Today is bbq'd chicken (in oven, outside snowing a foot)
next should be a batch of spaghetti.
Then probably a batch of what my mom calls goulash, but locals refer to it's likeness as chilimac.
All split up with canned soups and stuffing and taters and ice cream sundaes.
