The short answer is that the grey areas are cut part-way through, the white areas are cut all the way through, and the black areas are left alone. The website I mentioned above is where I learned how to carve in this 3-tone method, and you can also learn there how to make your own patterns. When Halloween gets closer I'll make a post in the messageboard with some tips and tricks and a link to all my patterns once I'm finished.
