So what really happened to Gunn?

I've got my theory. It goes something like this...

Fact A - Remember who used to live in the White Room? Mesekhtet, embodied in the form of a little girl -- one of the five members of the Ra-Tet and Wolfram & Hart's link to the Senior Partners.

Fact B - Recall that Lacey leads Gunn past the security office, causing him to suggest that that's the place where he'll get stuck. Recall that Lacey indicates that they have bigger plans for him.

Fact C - Gunn's demeanor when he reappears in the W&H lobby is... noticeably different. He says that he's taking the deal to hook up with the firm.

Hypothesis: Wolfram & Hart, in that weird panther scene, have imbued Gunn with the power of at least part of the Ra-Tet. They've made him the new conduit between the earthly offices of W&H and the Senior Partners. Thus, he got a serious power-up, but has been corrupted (at least somewhat) into a servant of Wolfram & Hart.

History doesn't always repeat itself. Sometimes it merely shouts "Weren't you listening the first time?!?" and lets fly with a club.

Well.. if Angel is anything like BTVS... Gunn will die this season. Two to three seasons seems to be the norm for most secondary characters. He gets you hooked, and then pulls out the carpet.

gotta love it though...
