The second episode ever aired.

I think I most like Jayne's "Looks like a thing to me" after Kaylee saves the ship.

Or the interview duel montage between the Alliance officer and the Serenity crew and passengers.
Maybe River gazing in awe of the stars while Simon is quivering in fear of being spaced (losing pressure in his space suit.)
