Sorry about the delay - different time zones...

Baked New York cheesecake:

Sift 2oz self-raising flour and 1/2 tsp baking powder. Add 2oz butter, 2 oz caster sugar and 1 egg. Beat well, pour into base of a greased and lined 8 inch tin.

Separate 4 eggs. Whisk yolks with 8 oz sugar. Beat 1 lb soft cheese, add in yolk mixture. Sift in 1,1/2 oz plain flour, juice and rind of 1 lemon, 5 oz sour cream and 3 oz sultanas. Whisk egg whites until stiff, and fold in. Pour into tin.

Bake at 170c (gas 3 or4) for 1 hr, then leave in oven for 1 hr more. Cool for 2-3 hours, or overnight in fridge.

(Sultanas can be pre-soaked in something alcoholic if liked)


Unbaked cheesecake:

Base is crushed biscuits and melted butter, twice biscuit to butter, according to size of tin. Cool in fridge.

Topping is half cream cheese (ricotta if you can get it), half creme fraiche, whisked with sugar and lemon zest to taste.

Hey hot mammas (and pappas)! Hope everyone is feeling better. Had a migraine nearly get a foothold on me this morninh, but I beat it back with pharmaceutical goodness and a little rest. Yay!

I'll see your peanut butter cheesecake recipe (oh please!), and raise you a challenge.
Get this one just right:

Pumpkin cheesecake.

It has a graham based crust, and is served seasonally in hughnormous cubes (at least 4" on a side, possibly only 3" high) at the chain of restaurants known as Tully's.
So light and fluffy it's almost like a mousse, and the crust makes me think whole wheat.

Tomorrow's the 13th wedding anniversary. Doctroid and I are playin' hooky! I haven't taken a vacation day in months and months. No firm plans yet, but when I mentioned catching a matinee to my mom she giggled.
Then explained to me why people over a certain age will snicker when you talk about matinees.
Then I giggled.

Rosie.. here you go
2 pounds cream cheese
1 1/2 cups granulated sugar
4 large eggs
1 cup creamy peanut butter ( I think it needs more peanut butter so feel free to add more here)
1 tablespoon all purpose flour
2 teaspoons vanilla extract

Combine cream cheese and peanut butter in a large bowl. Beat the mixture in an electric mixer (using a wire whip) until smooth..really really smooth or else you get weird melty peanutbutter lumps in the cheese cake. Gradually add sugar and flour. Beat on medium speed until sugar and flour are blended completely into cheese and peanut butter mixture. Make sure to use a rubber spatual and move the mixture into the middle before you add the eggs. Add eggs gradually and continue to beat on medium speed for two or three minutes until mixture is smooth. Mix in the vanilla extract. Be careful not to over-mix. Remove bowl from mixer. Pour mixture onto crust( see crust recipe at bottom or use your own. Place cheesecake in oven on center rack. Bake cheesecake in a water bath for approximately 2 hours in 350 degree oven or until tip of a knife comes out clean when inserted in center of cake. Crust- 1/2 C powdered sugar, 1 C grahm cracker crumbs 1/4 cup melted butter. Mix the crumbs, powdered sugar, and melted butter then press firmly into the springform pan bottom

EDIT- found one that is Paula Dean's I'd totally trust her she rocks!!
Crust:
1 3/4 cups graham cracker crumbs
3 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1 stick melted salted butter
Filling:
3 (8-ounce) packages cream cheese, at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs plus 1 egg yolk
1/4 cup sour cream
1 1/2 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
1/8 teaspoon ground cloves
2 tablespoon all-purpose flour
1 teaspoon vanilla extract


Preheat oven to 350 degrees F.
For crust:
In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.

For filling:
Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.

Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

Sticky toffee pudding:

Makes four ramekins

Chop 3 oz dates, soak in 3 oz boiling water with a dash of vanilla and a pinch of bicarb.

Cream 1 1/2 oz butter with 2 1/2 oz caster sugar, add 1 egg, then 3 oz self-raising flour. Stir in date mix.

These go for 25 mins in gas 4 /180c.

Sauce is 3oz brown sugar and 2 oz butter melted together, then stir in 3 Tb double cream. Pour over puddings and grill for 5 mins.


Of course, I probably have a recipe for broiled small child somewhere in my cookbook collection - the 'Titus Andronicus' Meals for the Family' perhaps...

Sorry for being in such a bad mood earlier. Meeting is out the way now and holidays that much closer. Managed to persuade the board that is really WASN'T my fault that the student was a lazy underachiever, and that I'd tried everything I knew how to help her.

Anyway, enough of such stresses (and thank you Gee and SpaceAnJL for your sympathy), I am determined to be more cheerful and positive today (despite my sore back).

What sport would you like to be doing if you could, Gee? Sorry your toe's still bad. You'd have thought that nail would have got the message it was unwelcome and dropped off on its own by now!
