I took that as River blurting out what Jayne was thinking. It feels more like one of his lines (cf. "Smells like crotch.")

Serenity The Official Vissual Companion ISBN 1-84576-082-4 Edit: Available through Amazon via the link on the home page. It's basically the shooting script, an interview with Joss, and some production notes combined with lots of pretty pictures from the movie, concept art, story boards and the like. I would call it a must have.
