In the hospital in Ariel, I've noticed that medical staff (note the surgeon who apprehends Mal and Zoe) wear white rather than green. As I understand it, white was dropped in favour of green as it caused eyestrain under the glare of surgery lighting. So why have they gone back to white 500 years hence?

You think you know--what's to come, what you are. You haven't even begun.

Maybe the lights got more advanced?

Human beings, who are almost unique in having the ability to learn from the experience of others, are also remarkable for their apparent disinclination to do so.
A troll's hair is still pointy, even when it's wearing a hat.

Because the costume designer didn't know that white was dropped for green and why.

Neat bit of trivia, BTW.

Well the doctor might not be a surgeon and even if he was, he seemed to be miles away from the operating theatre. Maybe white was the general uniform, a variation of the white coat.

Because the costume designer felt like it, thats why.

The cut of the scrubs was a lot different than what we are used to today, also. To me, they almost looked like something I would expect to see in an American Civil War field hospital. Given that Simon's "dapper" clothes in Serenity (pilot) seem to match to about that era (within 20 years or so and within my limited knowledge of historical fashion), that would not be shocking. Maybe that is what they were going for?

Mostly, though, it probably just had the right "look." I'm no costume designer, but for those artists, I would imagine that not having to worry too much about reality has got to be one of the fringe benefits of doing a sci-fi show.
