My absolute favorite sushi is Mackerel. It's a fishy tasting fish. Most people can't stand it because of the texture and stuff, but it is quite yummy!

I also love spicy tuna hand rolls! YUM!

I'm not sure what it's called, but it has salmon and avocado in it, and it's wrapped in seaweed, then a layer of rice. Very tasty.

UNAGI!
And Maguro. And salmon. And spider rolls. And catapillar rolls (though I think those are only in my local place, but they have avacado and sesame seeds and eel) and and and...

Anything not involving too much roe, sugared eggs, or squid.

Lord and Lady, you like sushi too? Can you get any more perfect?

Hey - I just got back from a sushi lunch! mmmm... wasabi...

Let's play Name That Sushi!! I got a box and I have no brain for remembering names - there was one fish that was all white, and it was just soft and almost creamy. Sooo good. Anyone have a guess as to what it was?

Fatty tuna is my favorite - but the whitetail (if that's what it was) caught me by surprise. Yum!

Tuna sushi, however....mmmmmm.....

Negi toro is the fatty cut from the underside of tuna. It's quite delicious. It's also an expensive cut of the fish and can go from anywhere to $7 - $15 for one. But it's well worth it, in my opinion.

love sushi. discovered it when i was living near nyc. down there, they have sushi in the mall foodcourts, and more jap than chinese restaurants. at our elem school, when a math class took a poll of the kids favorite foods, i was so delighted and shocked to see that *sushi* won over hotdogs, pizza, and pb&j. nyc kids are way cosmo. in my hometown (roch ny), i wasn't aware of a single japanese restaurant growing up. now there are 4 that i know of, and the local grocery stores carry rolls daily. my family still won't try it tho, and my dad's a fisherman! soooo whitebread.

Oooh sushi!

*looks at StillFlyin with a raised eyebrow* You love all sushi, huh? *pushes a plate over* Well then, have some natto nigiri sushi, some corn salad (corn with mayo) nigiri sushi, and the squid innards ones (I know a place that makes all of those). You can have my share.

Growing up in Hawaii, where a lot of people imigrated here to work on the sugar plantations I have a leaning towards inari sushi (not those teeny weeny ones I've posted -- ones big enough to fit in your hand) and maki sushi.

Nigiri types...ooh...amaebi, fresh ikura (salmon roe), fresh tobiko (flying fish roe), sea urchin, most of the fish ones, anago, unagi....almost everything, minus the egg one and the ones I've mentioned above.

PR: Have you had anago? It's another eel...ocean-water eel, I think (I can't remember if unagi was fresh, anago is the opposite). It's not as covered with the unagi sauce, but most places let you add the sauce to your liking.

One request, though Mima: Could you please not use "Jap" when referring to Japanese? It's still considered a slur even though it's been 60+ years since that war. Thanks

Yes, tuna sushi. That is maguro. First sushi I ever had, at age six. Much better raw than canned, that's for sure

Another spicy tuna with extra wasabi here, please! I love everything but eel and octopus. I love that Sushi is pretty much the only thing you can totally stuff yourself silly with and actually feel BETTER afterwards.

I'm trying to get my mom to try it. She's a bit old school and the idea of it grosses her out, but she started to get interested when I told her it was a lot like lox (smoked salmon for you goys) with rice wrapped around it ;)

Having grown up with a Japanese grandmother I had sushi since I was able to eat solid food, but for some reason I keep on coming back to tekka maki. I have no idea why. Perhaps its the simplicity, or the comfort, or maybe it's just that I don't like the ones that have been rolled in salmon eggs.

Eating live goldfish was the rage many, many years ago. And not all sushi is raw fish. Even though the raw fish is damn tasty.
Guy, call all the japanese places you can find and ask if they have a sushi bar. You're very right, buffet is not the way to do it (though buffet sushi is usually not the raw kind).

Farfly: Goldfish swallowing in the U.S. was in the '60's if I recall my history correctly. If you're talking about larger sized fish (or even lobster) still squirming when the knife's put to it -- well, some restraunts in Japan do that (and have been for a long while -- how else are you going to make sure the sashimi is fresh ).

Ookamikawahara: I agree (as you can see in my first post here). I'm giving Mima the benefit of the doubt as being a) young, b) historically ignorant, c) erm...ah...best not touch that one (show's my experience and bias towards some folk).

No prob, it depends which meaning of giri you used. The noun, giri by itself means to have a debt or obligation. This is usually a very serious debt that you owe someone. The other form of giri is when it is combined with another kanji character (remember we are talking about the Japanese language here) the orginal meaning is kiri which is the verb form to cut, but when you add another kanji to it, it will become giri.
Examp Sanpogiri (a form from Iaido) lit transalate as walking cut. So hope that helps you out with your question.

Okay. How about the one with slightly sweetened scrambled egg on top? (Tamago nigiri-zushi)

Or how about the rolls with just cucumber (kappa maki),

pickled gourd (kanpyo maki),

pickled cucumber (shibazuke maki),

pickled Japanese radish (oshinko maki),

or sushi rice (with or without bits of carrots, green beans, shitake mushroms) inside a "fried tofu pouch" (aburage)?

There's futo-maiki with a slice of egg, kanpyo, sometimes takuan (pickled Japanese radish), carrots, sometimes shiitake mushrooms, and maybe a couple of other vegies.

There's also an egg-wrapped version of the futo-maki, using a thin layer of egg to wrap everything in (I couldn't find a picture of that). You could always go for the Korean-style (watercress, with the other things inside a futo-maki) or Hawaii-style (some have thin slices of teriyaki meat inside, or SPAM [quit shuddering, it's actually not that bad!] inside) maki-sushi.

Sorry, for the size of the pictures. I claim no power over the size.

I like tsukemono too. And I just found a place near me that sells umeboshi.
