Joss has a habit of creating extended families (Buffy, Angel, and Firefly all have them), and for me, Jayne and Kaylee have more of a good sibling relationship than any sort of romantic/sex one. River is like the crazy cousin to the two of them, so Rayne doesn't work; Mal's the father-figure, so anything with him and River turns me off, too. It's not that the relationships aren't perfectly plausible, or that they haven't been well-written; but, at the end of the day, the only crew-to-crew romances are Simon/Kaylee, Mal/Inara (eventually), and Wash/Zoe. And, again, these are my opinions. I probably don't express them as well as I could, and they might seem closed-minded, but there they are.

In Bushwhacked he was terrified of going for a spacewalk, but he put on the suit and did it anyway, for no other reason than there was a chance some stranger on the ghost ship might need a doctor. Not only that, but when even Jayne baulked at the thought of handling the reavers' victims, Simon volunteered, calmly explaining that bodies didn't scare him. In Safe he was prepared to burn to death by River's side rather than let her die alone, taking the awful chance that maybe, just maybe, they might not kill their new found doctor. In Jaynestown he refused to tell Stitch where Jayne was, even though the guy started threatening to tear his eye out. He doesn't even like Jayne, but he still didn't blurt out what he knew. In Out of Gas he was one of the few people who didn't panic at the awful situation the crew were in, even though he knew better than anyone what a terrible death they were facing. He just took care of Zoe as best he could and let the others try to fix the problem. He volunteered to help rescue Mal from Niska when he can barely even shoot straight. He also delivered a baby in the middle of a shootout during 'Heart of Gold', once again calmly doing his job in the scariest of situations. Those are just the examples I can think of off the top of my head. Simon? A coward? Gettoutahere!
