I'm curious who takes part in the DVD commentaries for Firefly. Is it just Joss Whedon or do any cast members take part? ANd for which episodes?

No, there's a commentary from a fair few people.

Joss Whedon and Nathan Fillion do 'Serenity'
Joss and Tim Minear do 'The Train Job'
Jane Espenson (Writer) Morena and Shawna Trpcic (costume designer) do 'Shindig'.
Tim Minear and David Solomon (Director) do 'Out of Gas'
Nathan and Alan do 'War Stories'
Alan and Jewel do 'The Message'
And finally Joss does 'Objects in Space'.

All in all I think they're pretty good, they're a good mix of information and just being stupid :P

The BluRay set also has a commentary of "Our Mrs. Reynolds" with Joss, Nathan, Ron and Alan.

The Serenity Collector's Edition DVD has a solo commentary with Joss as well as a commentary with Joss, Adam, Nathan, Summer and Ron.

Both amazon.com and Best Buy show it available on their websites. I'm sure others have it too.

Yes. Everytime I'm in Best Buy, I move some copies to more prominent areas in the movie section.

FYI, the BluRay has both commentaries also. And the cast commentary has a PiP feature that shows them as they talk.

I played it for 10 seconds at a random spot. Adam Baldwin was saying that young Summer was a girl from his daughter's dance class. The girl was heartbroken when Summer Glau overdubbed her voice. Summer felt bad for her, “Wow... I didn't know that...” Joss said, “I love to make little girls cry.”
