I believe in solving problems, not sharing them.

Someone over this weekend decided it was a good idea to have the lady doctor that I work for give a presentation on cooking. A subject which in my opinion she know little to nothing about.- BRENDA Cooking what?

She didn't tell me what about cooking she was going to be talking about. But I personally don't think it matters. She really knows nothing about the subject.[

Seems like YOU should do the demonstration, since you do their cooking. It's interesting, when our caregiver and her children lived with us for a few months (after her husband got them evicted by snorting the rent money up his nose) by way of some recompense she cooked some meals for us. She was a phenomenal cook. She cooked an entirely different kind of meal in a different kind of way, and it was delicious. I remember, to this day, the amazing enchiladas that she made.

I'm not a bad cook, either, we were just ... different. When you cook by yourself, you get into a kind of rut. It's not necessarily bad, but a different style.

I think it would be nice to be able to share food and share recipes. Too bad we can't vlog our favorite recipes.

Last night we had "breakfast for dinner" again. Since we tend not to eat bfast, this gives us a chance at pancakes and sausages.

I know. They are apparently going to some family camping thing over the weekend which is where she will be doing this. I cringe just thinking about what she will be telling people.

I am a fair cook to start with but with my diet restrictions because of my seizure meds there are things that are off limits. I am still a fairly good cook as anyone who has eaten what I have prepared will tell you.

When you cook for yourself you do things your way. I know.

Nothing wrong with "breakfast for dinner". My dad used to make that every once in a while when I was a child. I make pancakes for myself in the evenings every so often, they contain no eggs or milk.

Going out in a minute I forgot to get some tomato paste yesterday for some ground meat that I am putting into the oven for my supper later.

I think I'm a better than average home cook. I give myself a 'better than' rating because every now and again I'm reminded how really - is crude the word? - some home cooking can be.

But then sometimes I'm reminded how gifted some home cooks are. And gifted in different ways. My old roommate did homecooked Italian dishes to perfection, but not what most people think of as Italian. Not lasagna dripping with cheese, or pizza swimming in toppings. No, this was burdock in a light coating pan fried until the vegetable was tender but still fresh, and the coating was lightly golden and delicately crispy. Or pasta with garbanzo beans in a light tomato broth. My African-American friend's mom came from the south, but she made the most delicious lasagna I've ever had. The meat sauce was rich and tangy, the ricotta had a light fresh dairy flavor, the noodles perfectly cooked just beyond al dente, and everything dense enough to cut into squares that stayed upright. And her mixed southern greens (turnip, mustard, collard, kale) ... I never liked greens and I still don't, but that dish was a revelation of just how good they can be. I didn't just like those greens, they amazed me. To this day I'm still trying to figure out how to make them. Then, an Ethiopian co-worker's wife used to sometimes just create lunchboxes for us that we could order. The variety and quality was unbelievable. And, unlike me whose sense of smell has always been in the seriously impaired range, both my sisters were blessed with a phenomenal sense of smell and could put things together that were just complete with all the flavors in balance.

A few things about my cooking is that a lunch or dinner meal has to have at least 8oz of vegetable, ~24g protein, ~24g carbohydrate (including vegetables and beans), be under 500cal, and use no salt. So, given the requirements I put on my recipes I think they're pretty good.

Today I'm trying a new recipe which is Turkish beef and cannellini bean soup. But since the original recipe is low on protein, I'm adding a grilled beef meatball with that tasty grilled flavor to each portion. That way I can boost the protein without changing the taste of the soup.

And in regards to nothing, I've discovered pig's feet to make a beautiful pork-based broth.

I am not religious. I just mentioned it because lamb chops are a treat I only buy at certain times of the year, like around my birthday and such.

Did we already cover pancake recipes?

Do you go for the fat, fluffy, moist and soft pancake, or the flat rubbery unleavened chewtoy flapjack? Wrap it around a sausage, or fold like a taco, covered in PB and jelly?
No eggs? I see recipes of waffles and pancakes with the primary difference being eggs - is the pancake the one without?

Anybody want to share secrets for the most fluffy pancakes?

Lamb chops are good. I usually pan fry them with salt & pepper, maybe some garlic. NO mint jelly. I can't tolerate mint.

Went to the antique shops when I visited my brother, Brenda, but still haven't found that Hogan's Hero's record. They had a HUGE selection of old records a year or two back, but they must have sold most of them down since there was only about 1/4 of what they had back then.

Still keeping an eye out when I go to Goodwill too, but they don't have a huge selection there ever.

I decided that I'm going to start buying DVD's of movies I like. Many years ago, I had a collection of around 25 or so that I gave to my brother since I was going completely digital with everything. He had upwards of around 700 of them. My mom and step-dad easily had over 1,000.

KODI has pretty much been shut down. I've got Netflix, but they've got shit for a selection. I wanted to watch Galaxy Quest and Idiocracy recently, but of all the online streaming services only two of them currently have those movies, and they're only available to rent for 48 hours above and beyond the normal subscription fees!

A few years ago, I could have gotten a lot of DVDs, but I didn't want them at the time. My bro had a flood and lost a lot of them, and used that as an excuse to get rid of the rest except for those he couldn't get online digital codes for legit copies. My parents got rid of most of theirs during and after the move. :(

Goodwill seems to be a great place to do it though. If I stop by during the week, I figure I'll only buy ones that I put really high up on the list at $2.00 if I see them. Those that are lower on my list I'll take my chances and buy on the Saturdays where everything is half price for a buck.

This weeks acquisitions:

Big Fish
Caddyshack
The Green Mile
Office Space
The Secret of NIMH
Serenity :)

Office Space was the only one that cost me $2.00

No worries Jack. The last time I was at the Salvation Army Thrift shop all I found was records that were classical and a couple from singers that I haven't seen since I was in High School. Also some soundtrack albums but stuff like "Flower Drum Song" and the like.

I had a troll through their DVDs as well but nothing I wanted. I am on the hunt for a copy of "Gladiator".

Actually saw a copy of Gladiator, but didn't pick it up.

I like the movie, but I'm starting out slow with movies I really like, or really want to see (Green Mile and Big Fish are on that list, and Big Fish was factory sealed, so that made that choice easier).

Maybe eventually I'll have a huge list, but I'm not entirely sure I want to commit to this yet, and I'm being pretty picky right now. I could have easily dropped $200 and cleared them out on half price Saturday if I wanted to. :)

You outsmarted yourself.
DOH!!

Good thing everybody followed your advice to get rid of movies they OWNED and switch to paying companies to trickle them down, parcelling out for your pay.

My favorite places were Half Price Books, pawn shops, used DVD/CD stores. Almost never found squat at Goodwill or Salvation Army. Pawn America had HUGE quantities, but never organized or alphabetized them.
I sometimes worked out a deal with used DVD stores: I would sort all DVDs into simple Alphabet, like all Cs together, all Fs together, in exchange for credit. I became the expert on exactly what they had in inventory, they would ask me if they had something. Therefore I got first dibs on everything I had never been able to find. Worked out awesome. Took several weekends, set my own hours, around the times they specified. Once organized that way, it was easy for them or anyone to maintain it.

Yeah... well. Like I said, I only had about 25 DVDs in my life. It wasn't a huge collection that I lost. I just lost out on getting any of the good ones that my parents and brother had for free.

I could always go back to downloading them off of torrents, but I know a few people who got caught doing that. It never bothered me much before, but now that they're watching our internet activity closer than ever state side and the EU is passing laws like Article 11 and 13 (or whatever numbers they're calling them these days), I figure why take the risk when I can buy a physical copy for a buck. Plus, I had hundreds of movies and TV shows that I downloaded years ago on a NAS unit that crashed and I lost all of them. If I have the DVDs, I can always make compressed digital copies on my own and have a physical backup.

The Goodwill by me always has a huge selection. Eveyrone is getting rid of their DVDs these days with BluRay and digital media being the new standard.

Do Right, Be Right. :)

Funny story about Russel Crowe...

I was at my old man's house, right around the time when Britney Spears, Beyonce and Pink did that Pepsi commercial where they were all wearing gladiator gear, back around the time that the movie Gladiator was big.

There was a TV guide or something peeking out under a stack of other things on my Dad's kitchen table, and I saw nothing but an ass wearing gladiator gear, and I said, "nice ass". I pulled the other stuff away and it was Russel Crowe in his Gladiator garb.

I stand by my statement.

He was a gorgeous man. I remember seeing Virtuosity in the theater when I was maybe 13 and I remember thinking to myself that he was the best looking man that I had ever seen in my life.

I believe in solving problems, not sharing them.

Just a word of caution: DVDs do not keep indefinitely. We've had some DVDs become unplayable after 10 years or so, and these were stored properly and not mishandled or scratched. we do have a lot of pollution here, including ozone, so maybe our DVDs deteriorate faster here than eleswhere. But if you really want to keep those movies for the foreseeable future, you might want to copy them to a hard drive or something.

I didn't know that for a fact, but I had always assumed that to be the case. There probably is no current single solution to preserve a movie indefinitely.

A friend recently wanted to know how to convert his DVDs to a digital collection. I'd helped him out a few times with computer related stuff, so he figured I'd know. I didn't.

He was willing to pay, but was hoping to find a free alternative. I managed to find two ad-free programs with unlimited use to do the trick. One rips the complete movie to a .VOB file which (I believe) is lossless in quality. It takes about 2 hours to rip Jurassic Park, which was a 2 hour movie. I think that's just a coincidence and my old tech is really slow. I don't believe it would take 2 hours to do on a good new computer. The output file was just under 5GB.

The second program is a compression program. This is where it gets time consuming, and you have to ask yourself if it's worth the money to buy larger hard drives to store the full VOB files, or if it's worth your time to compress them into MP4 files. It took around another 6 1/2 hours to do the compression. The final file looks just as good to me and was only slightly larger than 1 GB.

Really, if you were going to do this on any sort of grand scale either way, you'd have to get yourself into a routine where you tried to get one started before you sleep or before you go to work or something. It's kind of out of the question for me at the moment since my old beast is largely my go-to form of entertainment these days, and weighing it down with either of these processes makes youtube or any other streaming stutter.

If anybody would be interested in the names of these programs, feel free to ask. I'd have to get you the direct legitimate link to the first program though since the last update was around 2004 and a lot of copycat websites that offer downloads with a lot of malware have popped up over the years to spring their traps on the unwitting.

If you were to back up your DVDs in such a manner, you could still keep the physical DVDs in storage, and even if they were to go bad, they'd be your "receipt" of sorts to prove that you had a genuine copy you paid for.

It's not as if that's something to really worry about in 2019 America, but who knows when they'll be able to bust down your door to ask if you have permission to that digital copy of Captain Marvel you're currently watching.

"The second program is a compression program." I've read that compression routines make music sound sadder, but I never looked into how. But if it's a movie that you really enjoy for the music, perhaps it's best to skip the compression.

What?
How are DVDs different than CDs?
Are they fogged?
How don't they play? Start of movie, middle scenes, end? Table of contents?
When you say no scratches, you mean also no scuffs?
DVDs don't play only on your player, or also on any other players?

I have DVDs older than 15 years, no problems.

We have some DVDs that don't paly but others do. It's not a player problem, its a disc problem.

Don't forget, we live in a polluted area ... worst in the nation. Bad ozone. And ozone is what chews up the metallic/ dye layer that stores the info. Maybe that's what happened to our DVDs.

Unsealed Discs?
How is ozone accessing the data layer near the center, the hub? The center of the disc is where the start of the data/film is located, and the index or ToC.
I don't know that I believe this.
How far out are the data on the discs that don't work? Many works per disc, or only one film, one version, single side?

Yeah. I failed to mention that.

I've never really had an ear for that kind of stuff. I listened to nothing but mp3's exclusively since about 1998 and it's never bothered me. I know people who say they notice the difference though and prefer an uncompressed format. I also know people who prefer records over anything digital as well.

Personally, I'd just go with the compression since hard drive space is still somewhat prohibitively expensive if you have a large collection, especially if you want to back everything up a second time. My reasoning for this is because if we're talking DVD backups, you're already working with a collection that is inferior in every way to BluRay anyhow.

It's all about convenience vs. quality, I suppose. I'd rather just have everything in one single networked drive that any of my TV's or video game consoles could easily access and pull up on the fly.

Do Right, Be Right. :)

Nothing to do with anything, but I saw an episode of 77 Sunset Strip with Shatner in it. I specifically watched because I was curious how he was as an actor before he decided to be a scene stealing hack. Less than average. Anyway, in this episode he gets into an extended fisticuffs with Stu (Zimbalist Jr), and they even had the same music as Star Trek - that vaguely imperial Roman gladiator music with brass and percussion. I swear Roddenberry stole it entirely. But in this show, Kirk - I mean Shatner - loses. And on top of it, he fails to get his shirt off.

He was less than stellar. I saw him in 2 movies he did. I was before Star Trek and I think the other was after. He was better in the first one which was based on "The Brothers Karamozov".

No worries Jack. I actually came to that conclusion when I was a child. People are definitely not my most favourite critters on this planet.

Least ways not the ones I have to deal with. These people being the lady I work for and her husband and someone else who works for her.

Warm weather is coming. :)

I think all I'll need is these new cables, a transmission fluid flush and filter replacement and I should get another 100k miles on that car. Probably last me another 10 years.

Have you considered getting another car? A second, backup car would allow less stress when repairing another, if repairing is the choice. Or just switch cars, not get rid of the old. You seem to be willing to spend much more on repairs than I would expect.
My last 5 or 6 vehicles have all been $600 from dealers, and lasted several years without somebody crashing into me.
Would you like to know how to buy cars from used dealers which are driveable, and least expensive?
Mine have included a full size wagon, a compact, a full size van, a 1/2 ton pickup, a minivan with sliding doors on both sides. Most times I had several to choose from. One was a sweet CA car, Nissan Sentra RWD, but I didn't expect it to be rustproofed. The full size vans, I had a choice of several Chevy's, couple Fords, and a Dodge.
When somebody would total me, I'd get a few thousand from insurance payouts.

I haven't really spent that much. A bulk of it last year was a new windshield and 4 new tires, just because I didn't know how to do it myself and the labor was reasonable. ($145 for the glass, and 265 for the tires).

Timing belt was $35, the seal I needed to replace for the massive oil leak was $8, spark plugs were around $12, air filter was around $10, and I probably spent around $60 on various types of Sea Foam.

The cables I'd need might run around $100, and shouldn't be that difficult to change. Maybe another $30 for a new transmission filter and fluid for a change. The entire exhaust system should run around $150, but that's only if it turns out that I can't just replace the small part that's busted without welding.

It's a 90's Toyota with less than 170,000 miles on it. The body looks great. Once I get that transmission cable thing sorted out, anything else I put into it is really cosmetic. It should last me another 50,000 miles with very little repair work, and the way I drive that's another 5 or 6 years. It only cost me $2,000 around 11 years ago, so maybe $2,800 after all the repairs. Not to bad paying about $250 a year for a car.

If you have a way of getting a reliable car for $600, I'd certainly look into having a 2nd one. I'm just not looking to spend much on a new car right now.

Otherwise, I have really gotten to know this car over the years. There's a lot to say about that. The devil you know, right?

Do Right, Be Right. :)

For the SeaFoam, just stick with the $6 item, like I had originally said.
